This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.\u003c\/p\u003e\n\u003cp\u003eThe Java variety traces its origins to Ethiopia, where it emerged as a natural mutation of Typica. However, genetic fingerprinting using molecular markers has revealed that Java is actually a selection from an Ethiopian landrace population known as Abyssinia.
