Melbourne's Axil Coffee Roasters has once again triumphed as Jack Simpson, a seasoned barista with over 10 years of experience, secured the prestigious title of Australian Barista Champion at the ASCA National Coffee Championships. This victory marks Axil Coffee's second consecutive win and highlights our unwavering commitment to excellence in the industry. Jack and the team are incredibly proud of this achievement.


"It is an incredible honour to be crowned Australian Barista Champion and to go on to represent Axil Coffee at the World Barista Championships in June. Anthony Douglas has been such an inspiration to me since being crowned World Barista Champion, so to be able to follow in his footsteps is a massive achievement," said Jack.

Jack introduced groundbreaking techniques and equipment, unveiling a truly unique approach to the art of coffee-making.In the competition, his routine showcased his mastery of taste, technical skill, and presentation, comprising three distinct coffee creations. These included an espresso, a milk-based coffee, and a coffee-based signature drink featuring a unique blend of lacto-fermented raspberries, cold vacuum-boiled bergamot tea, and clarified milk.

Jack's routine exemplified the need for baristas to stay creative and embrace the latest trends in taste preferences and technological advancements. His selection of cutting-edge techniques and equipment demonstrated a deep understanding of the ever-changing nature of the coffee industry.


“I wanted my routine to reflect the constantly evolving nature of the coffee world and the need for baristas to always be thinking creatively in order to keep up with trends in tastes and technology and the techniques and equipment used in my routine are a testament to this.”

From June 22nd to 24th, he will showcase his remarkable skills on the international stage.
