About The Coffee: This coffee was grown by Jairo Arcila at the farm Santa Mónica. his coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects.
Once cherries are sorted floated they undergo an 'Extended Ferment' for 2 days (EF2). This involves resting the cherries in anaerobic environment for 2 days in a cool room prior to moving to raised beds. This extended ferment shows in the cup with jammy fruit qualities and a improved silky texture.
This micro-lot is 100% Java. This variety originated in Ethiopia and is a natural mutation of Typica. The seeds were taken to Indonesia where it was named Java. In 1991, it was introduced to Costa Rica and in 2010, it made its way into Colombia.
