Jack Simpson's Recommended Recipe for filter: Use 20g of coffee and 91°C water, pouring 60g every 30 seconds for a total of 300g over 2.5 minutes. Aim for five even pours to ensure balanced extraction.
About The Coffee: Each year, Cuppers search Daterra for unique small lots of coffee. This small farm acts as a testing ground for new varietals, processing methods, and drying techniques.
This lot is the Guarani variety, a selection of Aramosa with naturally low bitterness due to its lower caffeine content. It undergoes a 62-hour anaerobic fermentation with Cachaça yeast before being dried as a natural.
