This coffee was grown by Luz Helena Salazar at Finca Maracay, an 8 hectares farm in Armenia. It was harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and dried in temperature-controlled conditions until ideal moisture content was achieved. You'll notice the refreshing tartness of green grape, balanced by the sweetness of rich toffee. Hints of pink lady apple add a crisp and bright finish, creating an enjoyable tasting experience.
