The Rouse story began when its founders were living in Hobart and were approached with the chance to revive a vacant café space. That moment inspired their return to Melbourne - and the creation of a space defined by warmth, quality, and community began.

The cafe has become a go-to hot spot in the area, thanks to their ability to stay ahead of the curve when it comes to local trends, while staying true to their own style and flavour.

Axil Coffee: What's the story behind your cafe - was there anything in particular that sparked inspiration?
The Rouse Eatery: When we were still living in Hobart, we were approached to bring new life to a closed-down cafe. This sparked the idea of moving back home to Melbourne to create The Rouse Eatery – a Melbourne cafe built on our vision of community, great coffee, and good food. That was the moment we began to bring our vision to life.
Axil Coffee: How do you stay competitive in a busy cafe scene?
The Rouse Eatery: We have a strong customer focus. We believe this sets us apart from our competitors. We genuinely care and listen. By doing so, we consistently offer personalised service. Most of our customers don’t even tell us their orders anymore. We just know!
Understanding our local demographic is also important to us. This helps us evolve and identify trends and customers needs whilst staying true to quality and flavour. We’re creating a space where the local community love to come back to and we couldn’t be prouder.
Axil Coffee: Tell us about your relationship with Axil Coffee. When did you start using Axil Coffee's beans and why?
The Rouse: Axil Coffee has been with us from the day we opened. The coffee blends are always consistent, and the customer service is amazing.
