About The Coffee:This coffee was grown by Felipe Arcila at the farm Jardines Del Eden. This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.
The Java variety traces its origins to Ethiopia, where it emerged as a natural mutation of Typica. However, genetic fingerprinting using molecular markers has revealed that Java is actually a selection from an Ethiopian landrace population known as Abyssinia. Research conducted in Cameroon has demonstrated Java’s tolerance to various coffee diseases, making it an excellent choice for small-scale farmers seeking resilient and high-quality coffee varieties.
